The Regional, Seasonal, Sustainable Soups CAS exemplifies the school’s commitment to sustainability by promoting the use of organic, local, and seasonal ingredients in their vegan soup recipes. 

By focusing on these factors, The CAS teaches the group how to reduce their carbon footprint by avoiding the transportation and energy costs associated with importing ingredients from distant regions. In addition, the CAS fosters a deeper appreciation for the natural rhythms of the local environment and the importance of supporting small-scale, sustainable agriculture.  

Furthermore, the CAS’s emphasis on sustainability extends beyond just the ingredients they use. They also engage in discussions about the environmental impact of food production and consumption, encouraging students to consider their own dietary choices and how they can contribute to a more sustainable food system. This holistic approach to sustainability education helps students understand the interconnectedness of various social and environmental issues and fosters a sense of responsibility and agency to address them. 

In addition to learning about sustainable food practices, the students also share their own experiences and perspectives on maintaining a sustainable diet. They discuss different cultural approaches to food and share soup recipes from their home countries, broadening their culinary horizons and deepening their appreciation for the diversity of global cuisine. 

In addition to the educational aspect of the CAS, the group also fosters a sense of community and belonging among its members. Through the shared experience of preparing and enjoying a meal together, students form meaningful connections and engage in conversations about important topics beyond just sustainability. Through this CAS, students not only develop practical skills in sustainable cooking but also deepen their understanding of the importance of sustainability in all aspects of life.
